The "Echigo Set Meal," featuring rice stored in a snow room, is now available!

A 5-minute walk from Shimokitazawa Station in Tokyo,Fermentation DepartmentThere is a shop like this. It's a select shop that handles interesting fermented foods from all over Japan, known only to those in the know.

At that fermentation department, the snow-room aged rice developed at this COI-NEXT base has been decided to be used in the "Echigo Teishoku" (Echigo Set Meal), and starting today, July 16th, it will be available. This is a limited-time offer for 3 months until September!Fermentation Department Instagram
Rice from three partner farms in Nagaoka (Nakamura Nosan, Hyakusho-kai, and Chobe Farm) will be offered in rotation.
If the timing is right, vegetables harvested from the university's front field may also be used. Growing without pesticides is a battle against weeds...

The Echigo Set Meal includes rice made with "Yukisan" snow-aged rice, as well as "Chilled Noppe," "Grilled Salmon Marinade," "Grilled Edamame," "Echigo Miso Marinade," and a side dish of summer vegetables.
